August 2006

Greetings!

This is the time of year that we just can't get too excited at the thought of cooking big meals, and why should we? The produce is spectacular and needs little embellishment. Ericka Carlson has devised a tasty recipe for you that is a good example of eating fabulously without spending hours in the kitchen.

Our new Fall catalog should be up on our web site shortly. We have a great line-up of classes so stay tuned ... and stay cool!

In our effort to focus more attention on our Pacific Northwest wines, we are minimizing and even eliminating some of the other wine sections. This is good news for you because we will be marking down the wines in those sections- some even down to our cost.

Grilled Fig Skewers with Goat Cheese

Figs are coming into season right now and what better way to eat them than hot and caramelized from the grill?

Ericka Carlson, one of our chef instructors at In Good Taste, came up with this delicious and elegant recipe that's perfect at this time of year. The dish is simplicity itself, letting the freshness of the figs and goat cheese speak for themselves.

    Wine Suggestion
Fred Armstrong, our sommelier, says: "Because of the sweetness of the figs and balsamic, this dish requires a fairly full and fruit forward wine. My choice would be the Owen Roe’s Abbot’s Table Red. This is truly a kitchen sink wine consisting of a blend of 34.5% Cabernet Sauvignon, 17% Merlot, 15% Zinfandel, 9% Cabernet Franc, 7% Syrah, 6% Blaufrankish, 4.5% Sangiovese, 3% Pinot Noir, 3% Grenache, 1% Malbec. It is big and fruity - but not too fruity - while still remaining balanced.

    New in the Store

Pam has scoured the markets to bring you some new and exciting items, including:

    - Wild River Grilling Cedar Planks - this patented 2- piece Gourmet Cedar Plank Set consists of a reusable & replaceable extra thick cedar plank insert that nestles into a stainless steel grilling tray. The decorative grilling tray provides protection from the grill flame, evening out the heat while extending the life of the plank. The mositure retention in the soaked planks lasts much longer, resulting in a very moist salmon. Used for grilling or baking, the gourmet cedar plank set can be carried right to the table for a wonderful presentation.

-Chaloner Olive Marmalade from Stellenbosch in South Africa. I know I may be a little biased (being from South Africa myselfl) but this olive conserve with lemon and herbs is just delicious. What more can I say? It goes well with cheese, roast lamb and other meats, and is a perfect dressing for summer sandwiches. (Think picnic!).

    - RJ's Natural Soft Eating Licorice (black or red) from New Zealand. We just love this treat, especially because we know it's 97% fat free.

    - Volterra Fennel Salt which is great on meats, seafood and potatoes. I especially like it with pork and fish.

    - Bakeware from the CIA (Culinary Institute of America), designed by their master chefs. You should come and check out this affordable, top-of-the-line bakeware.
