Celebrating Mothers May 2008
Greetings!
It's time to celebrate our mothers again. If I could, I would follow Josie's plan for Mother's Day (see below) but as my mother is half way across the world, I'll have to settle for a long, cozy phone chat instead. However you choose to celebrate the day, we hope it is filled with joy and happy memories.
 
In the meantime, we are also preparing to welcome our new neighbour to the Pearl, the Deschutes Brewing Company. Time for some more beer and food pairing classes, perhaps? We're also excited about our upcoming Mexican classes, especially the hands on tamale making class this Sunday.
 
Pam is back, almost full time. You can see her definite touch in the store; it's looking really good again. As Josie continues her recuperation, she is still able to write for us (see articles below).

Mother's Day - by Josie Ross

Mothers are such a blessing; I know my mom is my ultimate helping hand.  (In so many ways). And, Mother's day is just around the corner. (Just in case, mark your calendar for May 11th, that way it won't sneak up on you!) It's a day for switching roles with your mom: instead of her making breakfast for the family (and doing dishes), make her a gourmet breakfast, complete with flowers. To really put the icing on the cake, clean up the kitchen afterwards. Let mom hit "snooze", or better yet, don't set her alarm at all. That way, she'll really get to sleep in, and you can work some magic in the kitchen to show her how much you appreciate all she does. However, you don't need to use complicated techniques or difficult recipes to make a show stopping breakfast. Start with a pot of great coffee, like Boyd's House Roast, or a nice cup of herbal tea. Start your grand breakfast with a bowl of orange segments, marinated in a simple syrup infused with vanilla. From there, you could make a delicious savory quiche (see our Red Pepper and Goat Cheese Quiche), or some light and flaky scones (like our dried cranberry Cream Scones).  Even a plate of perfectly cooked scrambled eggs with sautéed mushrooms and shaved parmesan is sure to make her smile. No matter what, remember to serve good jam with the scones, milk for her coffee and don't even let her think about helping you clean. It's sure to be a memorable Mother's Day, and the effort is well worth it.

New Orleans Cooking - by Josie Ross
Bananas Foster Pie

This year's IACP conference was held in New Orleans last month. Barbara was able to go and enjoy some of the delicious New Orleans food specialties, like Trout Almondine at Antoine's Restaurant. I love New Orleans: great music, culture, and of course, food. Hearing about the conference made me crave good Creole cuisine. But of course, I always have to add my own creative flair. I was inspired to make a twist on the classic Trout Almandine, using some halibut from the Oregon coast and local filberts, which are coming into season now. Try Sautéed Halibut with Filberts for a quick, but elegant dinner.

 

Or, if you're more in the mood for dessert, you can try a hybrid version of two of delicious desserts, Banana Cream Pie and Bananas Foster in Bananas Foster Pie. It features a delicate, flaky crust, creamy filling infused with rum, and a lightly sweetened whipped cream to top it off. Taste this and you'll feel like you're in New Orleans in no time!

We love this tip from Shirley Corriher's classic cookbook, Cookwise:
To center yolks in hard-boiled eggs (for deviled eggs, etc.), store the eggs on their sides. That is, stand the egg carton on its side and by morning you'll have centered egg yolks. Some people even suggest cooking them in an upright position but we've found there's no need, if stored as described above.
