Cooking Artichokes
To prepare an artichoke, first prepare
a large bowl of very cold water and add the juice of half a lemon. Cut
off the stem of the artichoke. Peel off the leaves (depending on the
recipe, you may remove all or only some of the leaves). Cut off the top
inch of the artichoke. Using a serrated spoon (like a grapefruit spoon),
scrape out the fibrous choke from the center. Place the artichoke in the
lemon water (to prevent browning). Drain before using.
For all of these simple recipes,
prepare the artichokes as described above. Most of the recipes have
leeway for customizing it to fit your preferences. Enjoy!
Classic Tuscan Salad:
Shave raw artichoke heart over a bed
of arugula tossed with lemon juice, olive oil, and shaved parmesan
cheese.
Classic Steamed Artichoke
Steam whole artichokes about 40
minutes, or until tender when pierced with a fork. Serve the steamed
leaves with a Spanish-style aioli. Combine mayonnaise, a drizzle of
olive oil, minced garlic, and a pinch of saffron bloomed in 1 tablespoon
of white wine.
Sautéed Artichokes on Pasta
Heat olive oil in a large skillet;
sauté the sliced artichokes until tender, about 3 minutes. Toss them
with cooked linguine, lemon zest, olive oil and shaved parmesan.
Raw Artichoke uses
Thinly slice artichoke hearts, toss in
olive oil, and use them as a pizza or bruschetta topping, along with
prosciutto and fontina.
Artichoke Pesto
Quarter 2 large artichoke hearts, chop
finely. In a food processor, combine hearts, 1 cup basil leaves, 1 clove
minced garlic and 1 tablespoon parmesan cheese. Add 1 cup of olive oil
while machine is running and process until smooth. Transfer the pesto to
a bowl- serve with crudités, crackers, or crostini.
Roast Artichokes
Cut medium artichokes in half
lengthwise and remove chokes. Place cut sides down on an oiled roasting
pan. Sprinkle the pan with ¼ cup of water, and cover it tightly with
foil. Roast in a preheated 375 degree oven for 30-25 minutes. Season
with salt, drizzle with olive oil, and serve.
