Cherries Flambé
This is adapted from a James Beard recipe. I changed the quantities and some of the ingredients to make it simpler and more accessible- although his recipes are always hard to beat.
1.5 lbs pitted cherries, (keep any juice that you can) 1/2 cup sugar ½ stick softened butter 1/2 cup cherry brandy or Kirsch 1 pint vanilla ice cream
In a sauté pan over medium heat, combine the cherries and juice with the sugar. Cook, stirring occasionally, to dissolve the sugar and reduce the liquid-3-5 minutes. Add the butter and stir until melted and completely incorporated. Remove the pan from the heat, add the brandy and return the pan to medium heat. Bring the mixture to a boil. Tilt the pan over a gas flame to catch the brandy- allow flames to burn off. (you can do this with a long handled match instead, if you don’t have a gas stove).
Divide the ice cream among 4 bowls and top with the cherries. Serve immediately.
