Orzo Salad

1 cup uncooked orzo pasta

½ cup pitted green olives

1 cup crumbled feta cheese

1 tablespoon chopped fresh parsley

1 tablespoon chopped fresh oregano

2 tablespoon chopped fresh dill

½ cup oil packed sun dried tomatoes, drained and chopped

2 teaspoons lemon zest

5 tablespoons extra virgin olive oil

1 tablespoon red wine vinegar

salt and pepper to taste

Cook the orzo according to package directions. Drain and rinse with cold water.

In a medium bowl, combine the olives, feta, herbs, sun dried tomatoes and lemon zest- add in the pasta. In a small bowl, whisk together oil and red wine vinegar. Pour the dressing over the pasta, and mix well. Season with salt and pepper to taste.
