Potatoes with Mustard Vinaigrette

-serves 4

 

1 lb new potatoes – washed and cut in half

2 teaspoons salt

2 tablespoons onion, minced

2 tablespoons white wine vinegar

1 teaspoon honey

2 teaspoons salt

1/2 teaspoon black pepper

1 teaspoon parsley, minced

2 teaspoons mustard seeds

1 teaspoon mustard oil

4 tablespoons grapeseed oil

 

Bring a pot of water to a boil. Add two teaspoons salt and the potatoes. Cook the potatoes until tender when tested with a fork. While the potatoes cook, whisk together the vinegar, honey, salt, pepper, parsley and mustard seeds. Drizzle in the oils, whisking to combine. When the potatoes are tender, drain them and place them in a bowl. Add the onions and drizzle with the vinaigrette. Toss to combine. Allow the potatoes to marinate in the vinaigrette for 1-2 hours before serving.
