Summer Kale Salad

This salad is a great way to enjoy kale without a lot of cooking in hot weather. It’s great cold or at room temperature and be a side or entree. It holds up to pretty much anything you would like to add so play with your food!

1 head curly kale without large stems

½ large lemon or 1 whole small lemon, juiced (about 3 Tablespoons)

2 Tablespoons olive oil
1⁄2 tsp Italian Controne Hot Pepper (or substitute cayenne pepper)

1 large avocado
2 medium tomatoes, chopped
1 cup cooked edamame
Salt and pepper to taste

Wash, trim and julienne the kale. Mix the lemon juice, olive oil, Controne pepper together and pour over kale. Add the fruit of the avocado and mush it all together with your hands until evenly distributed on the kale. Add the tomato, edamame, and salt and pepper to taste, and enjoy!
